The Soldier was apparently Jewish at some level before HYDRA, so their perception of angels and demons are colored appropriately. Not quite the same level of reverence and fear, and not quite the same connotations of ultimate-good, ultimate-evil.

So I would actually do something instead of cowering in the ferry room." They can talk about being scared out of their mind easily enough, particularly since Crowley isn't a handler anymore, and they aren't particularly scared now. Just the normal on-edge feelings, kept hidden through long decades of practice, and need to keep alert for danger, not kept hidden at all because it's reasonable while on patrol.
